Simple Ham Carbonara
Melt a teaspoon of butter or margarine in a small frying pan, and cook 1 cup of mushrooms and a crushed garlic clove for 2 minutes. Remove from heat.
Cook 500g of your choice of spaghetti or pasta until just al dente in salted water. Drain, then return to the fry pan.
While the spaghetti is cooking, beat 4 eggs, ½ cup of freshly grated parmesan cheese and 300mL cream together in a large mixing bowl until well combined.
Stir 1½ cups of ham and the cooked mushrooms through the mixture. Pour the sauce over the hot pasta and toss gently to combine.
Return the pan to very low heat and cook for 1 minute. Add pepper to taste and enjoy!
